Simple French Baquettes

Here are the 2 pages from the “ old” Joy of Cooking Simple French Bread Recipe. Make sure to put that pan of boiling water on the bottom rack of oven and heed the instructions on jelly rolling the dough before second rising on both sides inwards! Enjoy! Stay Safe!

I made French Baquettes today with a recipe I have been using since I first made this as a teenager many years ago. It’s in the old “joy of cooking”, not the new “joy of cooking”. My mother had a few cookbooks but the “go-to” was The Joy. It has everything in it, even how to cook squirrel etc. I wanted to know what real French bread tasted like, and I have never stopped using this recipe. When people bite into it they roll their eyes. Low Carb Apple Pie with Low Carb Ice Cream

We all know that apple pie isn’t exactly low carb but when you make it with a keto low carb crust, sweeten your organic apples with brown sugar Truvia and serve it was carb smart ice cream it’s WAY better than regular apple pie. My husband had 2 slices. Crust: *1 cup almond flour, 5 tablespoons coconut flour, 1/2 teaspoon xanthan gum, 1/2 teaspoon Himalayan Salt, 1/2 teaspoon lemon or orange zest optional, 3 1/2 ounces unsalted grass-fed butter cold, 1/4 cup cream cheese cold, 1 egg lightly beaten, 2 teaspoons apple cider vinegar – I put everything in food processor and pulsed till I had a ball of dough, divided it in half, flattened, and chilled 1 hour before rolling out between parchment paper. Filling: I peeled and cut up 7 apples mixed with cinnamon, Truvia brown sugar and 2 Tbsp. Pastry flour, and 1/2 lemon. Place in pie plate and cover with crust. I brushed cream on top but you can use an egg wash. Bake 400 20 min and turn oven down to 375 and bake 40 more minutes. Serve hot with low carb vanilla ice cream. Looks Ugly Delicious. It’s very difficult to make a low carb top crust and this works and tastes great, very flaky. I did not put a bottom crust on this but you could, I saved the 2nd crust to make a quiche later. #breyersicecream #lowcarb #applepie #keto #lowcarbapplepie #lowcarbicecream #isolationcooking

Low Carb Coconut Flour Carrot Pecan Bread – 2 carrots grated, 1/2 inch fresh ginger grated, 1/4 c. Almond milk, 1/4 c. Juice from fresh orange, 2 tsp. Grated orange rind, 4 eggs, 1/2 tsp. Baking Pdr., 1/2 tsp. Baking Soda, 2 tsp. Cinnamon, 1 Tbsp. vanilla extract, 1/4 tsp. Grated nutmeg, 1/4 tsp. Himalayan salt, 2 Tbsps. Truvia, 1/2 tsp. Xantham Gum ( optional )

Mix everything together in electric mixer, put into prepared loaf pan that has been greased and lined with parchment paper and greased again ( I used spray coconut oil). I baked for 50-55 minutes in a 350 degree oven until firm. Makes 10 slices. Guesstimate 4-5 carbs a slice. #lowcarb #lowcarbrecipes #keto #coconutflour #carrotbread
