Coconut Ginger Homegrown Organic Hubbard Squash Soup by Melissa Abbott

Making an incredible Coconut Ginger Homegrown Organic Hubbard Squash Soup today. We had this Hubbard Squash that we grew in our garden last summer and today it turned into such a beautiful completely organic soup. So sweet and delicious. Cut up and roasted blue Hubbard Squash ( you could use Butternut), 5 organic onions chopped, a few Tbsp Braggs organic olive oil, large piece organic ginger chopped, Bob’s red mill shedded unsweetened coconut ( about 1/2-3/4 cup, 2 containers Organic chicken broth, 2 cups filtered water to thin if needed, Himalayan Salt to taste. ( I bought everything at DeMoulas Market Basket except the Squash, which I grew. Recipe: Sauté onions & ginger in olive oil, roasted squash, chicken broth, and salt.Cook until tender, using a hand held blender blenderize, add coconut and any needed water.
