Low Carb Apple Pie with Low Carb Ice Cream

We all know that apple pie isn’t exactly low carb but when you make it with a keto low carb crust, sweeten your organic apples with brown sugar Truvia and serve it was carb smart ice cream it’s WAY better than regular apple pie. My husband had 2 slices. Crust: *1 cup almond flour, 5 tablespoons coconut flour, 1/2 teaspoon xanthan gum, 1/2 teaspoon Himalayan Salt, 1/2 teaspoon lemon or orange zest optional, 3 1/2 ounces unsalted grass-fed butter cold, 1/4 cup cream cheese cold, 1 egg lightly beaten, 2 teaspoons apple cider vinegar – I put everything in food processor and pulsed till I had a ball of dough, divided it in half, flattened, and chilled 1 hour before rolling out between parchment paper. Filling: I peeled and cut up 7 apples mixed with cinnamon, Truvia brown sugar and 2 Tbsp. Pastry flour, and 1/2 lemon. Place in pie plate and cover with crust. I brushed cream on top but you can use an egg wash. Bake 400 20 min and turn oven down to 375 and bake 40 more minutes. Serve hot with low carb vanilla ice cream. Looks Ugly Delicious. It’s very difficult to make a low carb top crust and this works and tastes great, very flaky. I did not put a bottom crust on this but you could, I saved the 2nd crust to make a quiche later. #breyersicecream #lowcarb #applepie #keto #lowcarbapplepie #lowcarbicecream #isolationcooking
