
Low Carb Coconut Flour Carrot Pecan Bread – 2 carrots grated, 1/2 inch fresh ginger grated, 1/4 c. Almond milk, 1/4 c. Juice from fresh orange, 2 tsp. Grated orange rind, 4 eggs, 1/2 tsp. Baking Pdr., 1/2 tsp. Baking Soda, 2 tsp. Cinnamon, 1 Tbsp. vanilla extract, 1/4 tsp. Grated nutmeg, 1/4 tsp. Himalayan salt, 2 Tbsps. Truvia, 1/2 tsp. Xantham Gum ( optional )
Mix everything together in electric mixer, put into prepared loaf pan that has been greased and lined with parchment paper and greased again ( I used spray coconut oil). I baked for 50-55 minutes in a 350 degree oven until firm. Makes 10 slices. Guesstimate 4-5 carbs a slice. #lowcarb #lowcarbrecipes #keto #coconutflour #carrotbread
