Low Carb Almond Flour Lemon Blueberry Walnut Bread/Cake – You could use Cranberries to make this really holiday-ish. Super Lemony!
350 degree oven – line loaf pan with Parchment paper sprayed with coconut oil. 2 c. Almond Flour, 3/4 c. Oat Flour, 1/2 cup Swerve Brown Sugar, 1 full Teasp baking powder, 1 tsp. Salt, 3 eggs, grate rind of 1 lemon, juice of 1 lemon, 1 tsp. Vanilla extract, 1/4 c. Coconut oil, 3/4 c blueberries, 1 cup chopped walnuts. Combine all ingredients except reserve 1/2 cup chopped walnuts for topping. Place batter in prepared loaf pan, sprinkle with 1/2 c. chopped walnuts. Use a light touch when beating the batter, no overbeating. Bake 1 hour until done. I start checking it at 50 min but this took 60 min to complete. Cool before cutting.
