Low Carb\Gluten Free Apple Nut Strudel Almond Flour Loaf.


This is my 4th iteration of the Low Carb\Gluten Free Apple/Nut Strudel Almond Flour Loaf. My other variations were good but not this good. Charlie loves this and it makes the house smell really good. Oven 375 Baking time 45-50 min. Line a large loaf pan with parchment and spray with coconut oil.
Batter: 2 c almond flour, 1/2 cup melted coconut oil, 3 eggs, 1/2 c. Milk, 1 c Spenda Brown Sugar, 11/2 Teasp Baking Powder ( could maybe go to 2), Himalayan salt (a few grinds), 2 Teasp Vanilla Extract, heaping Teasp Cinnamon. I just throw everything in a bowl and hand mix it a few times and let it sit while I make the strudel part. This way the baking powder and liquids start to expand without heavy beating. It’s a little trick to make lighter fluffier things. ( BTW works really well with Pancakes) Strudel: 3 peeled and finely chopped apples, 1/2+ c. Chopped nuts like pecans or walnuts, 1/2 c Swerve Brown Sugar, 1/3 c. Melted butter ( you could use coconut oil but I wanted the buttery flavor without making the whole thing with butter ), 1-2 Teasp Cinnamon depending on your taste and the quality of your cinnamon. If you are using high quality Saigon Cinnamon follow the less is more idea, if it’s cheap everyday Cinnamon from the grocery store use more. Mix the strudel ingredients up in a small bowl by hand. Go ahead and mix up your batter a little more, you will notice air bubbles in it and that’s the lightness you are looking for. Do not over beat too much, as it beats out the air bubbles. Assembly: put half the batter on the bottom of the pan, then layer with half the strudel apple mix, layer with the rest of batter and then the final layer is the rest of the strudel filling. Use a light hand. Bake and then cool.
